When we gave up grains for our health, my husband and I frantically searched for a replacement of our most favorite bread. Toasted bread with butter was a staple breakfast companion when growing up, and the smell of it immediately takes me to a happy place. That being said, I’ve known that my digestive tract would be most appreciative if I could find a way to reduce the amount of grains I was consuming.

Upon launching this search a few years ago, I came across what is now our treasured bread recipe. With this hearty bread that meets the guidelines for keto, we can now satisfy our morning desires with a slice of fiber-rich gluten-free bread. Read on to learn how to make this simple keto bread recipe!


  • 3 egg whites
  • 1 ¾ cups almond meal
  • 2 tsp baking powder
  • ⅓ cup psyllium husk powder
  • 1 pinch salt
  • 2 tsp apple cider vinegar
  • 1 cup water 

Optional ingredients

  • Sesame seeds (for topping)
  • Chia seeds
  • Ground flax seeds
  1. Preheat your oven to 350 degrees F.
  2. Mix all of the dry ingredients in a bowl. If you’d like to include seeds, add chia and flax seeds to the mix.
  3. In a separate bowl, beat the egg whites and a pinch of salt until it forms into a stiff foam texture.
  4. On the stovetop, bring the cup of water to a boil, add the apple cider vinegar.
  5. Immediately after the liquid is boiled, pour into the dry mixture and stir with a spatula. The mixture will become very sticky.
  6. Add the whipped egg whites and carefully fold through. While you can use the spatula to continue folding into the sticky dough, I find it easier to fold the egg whites into the mix with my hands (just be careful not to burn yourself!). You will know it’s mixed well if the consistency of the mixture takes a sticky play-doh form.
  7. Form into a loaf and place on a sheet of parchment paper in a loaf pan. Sprinkle the top of the loaf with sesame and chia seeds.
  8. Bake for 55 mins.
  9. Slice and serve with your choice of butter or jam.
  10. The bread will keep best in the fridge and will be great for the next morning’s round of toast.

If you want to sweeten up the bread, you can add cinnamon and even a little bit of coconut sugar to the recipe. I hope you enjoy this great find and have fun making it your own!
